Cheater Chicken and Dumplings

Utilizing pre made products can be game changing when cooking not just for cheap, but for time. You'll still get a delicious tasting meal with no need to bake items from scratch. One of these very versatile items is a pre packaged can of biscuits. To make a cheater version of chicken and dumplings you'll need one of these at a cost of $1.38. A 1 lb package of chicken thighs ran me at $3.89, bringing my total cost for this dish to $5.27.


1/2 teaspoon pepper
1 teaspoon salt
1 teaspoon parsley
8 cups chicken broth
1 package boneless skinless chicken thighs
2 tablespoons flour
1 package canned biscuits

Place 8 cups chicken broth in pot. (I use Knorr chicken bullion I keep on hand, keeping my food costs down.) Add the 1/2 teaspoon pepper, 1 teaspoon salt, and the 1 teaspoon parsley. Stir. Next add in the boneless skinless chicken thighs. Bring to a boil. Turn the heat to medium low and simmer for one hour. After the one hour take the chicken out of the pot. Cut the chicken up into small pieces. While chicken is on the cutting board take 2 tablespoons of flour and whisk into the broth in the pan. Place chicken back in pan. Open package of biscuits. Cut biscuits into fourths. Drop biscuit dough in to pot and stir. Place lids on pot. Simmer on medium low heat for 15-20 minutes, stirring a couple times. Dough will look wet, but when cut into will feel springy, and the broth will have thickened up.  Chicken and dumplings are ready to eat!
