Yesterday was a day for using things up in the fridge. So that means getting creative with what I've got to make something I might not ordinarily eat with dinner into a delicious morsel of goodness that I would actually love to have leftovers of, and even eat again. A $1.20 bag of baby carrots can quickly become a sweet baked glazed carrot dish that made me reminisce about the holidays and candied yams. An $0.88 cent bag of frozen corn, steamed and seasoned with one tablespoon of butter and a dash of salt and pepper brought a fresh feeling to this meal, the chicken breast were split three ways from a 10lb bag that was just over $10.00, leaving that serving about $3.33 for two people for this meal. That leaves us right at $5.41 for a feast with leftovers. I keep psst brand lemon pepper on hand for flavoring. That's what I used along with a dash of kosher salt. Lemon pepper is a great seasoning to keep on hand because you can season pork, chicken, veggies, and fish with it.

Recipe for glazed carrots:
1 bag baby carrots
3 tablespoons brown sugar
1 tsp cinnamon
3 tbsp butter
Butter sides and bottom of casserole dish. Pour in bag of carrots, brown sugar and cinnamon. Stir and cover. Put in 350° oven for one hour.

This meal serves 2-4

Not every recipe I make will serve that 4 people, but the goal is to try to make recipes that serve 2-4. My growing teenage son eats equal to about two people, so if we have leftovers for about one person, that equals a meal for four in my mind. Ha ha.
