There's something about blackeye peas that makes them more flavorful than most other beans. This makes them a great choice for many different kinds of dishes, from complimentary pie to soup, but my inexpensive recipe of choice today was a flavorful stew with ham on an optional bed of rice. The total cost for this meal without optional rice was $5.48. With rice was only a few cents more because I only used 1 1/2 cups from a 10 lb bag of jasmine rice from H Mart, that only cost me about $12. As always I use my already on hand garlic, parsley, Knorr chicken bullion for the broth, and the cayenne pepper. Farmland precooked cubed ham was only $3.63 at Walmart. I used half a can of tomato sauce, and will be using the other half for spaghetti, making the sauce $0.37. The bag of dried blackeye peas was $1.48.
1/2 teaspoon cayenne pepper
1 teaspoon parsley
1 teaspoon pepper
1 teaspoon salt
1/2 can tomato sauce
8 cups chicken broth
16 oz fully cooked diced ham
16 oz dried blackeye peas
2-3 cloves garlic
Optional 1 1/2 cups white rice
Add all ingredients to a stock pot and stir. Simmer for two hours on low medium heat, stirring occasionally. Serve over optional cooked white rice.
